Pistachio Baked Oats with Pistachio Butter Filling
This single-serve baked oats recipe takes only 30 minutes and tastes like cake, but it's actually a super healthy start to the day! The pistachio butter can be omitted if you don't have any on hand, and you can also top with pistachios for a little extra crunch.

Ingredients
- ½ cup rolled oats
- 1/4 cup shelled pistachios plus more for topping
- ½ cup milk of choice I used Fairlife 2% for a little extra protein
- 1 tbs maple syrup
- 1 tsp vanilla
- 1 tsp baking powder
- pinch of salt
- 1 spoonful pistachio butter optional
Instructions
- Preheat oven to 400 degrees and lightly grease a small ramekin.
- Blend together all ingredients except pistachio butter.
- Pour half your batter into greased ramekin. Add spoonful of pistachio butter, if you're using (recipe here:https://taylor-likes.com/recipes/sauces-spreads-and-dips/pistachio-butter/), and top with the rest of the batter.
- Bake for 20 to 25 minutes, until center is firm and outside is golden.
