Sea Salt Cottage Cheese Brownies

These flakey sea salt cottage cheese brownies are a healthier dessert that perfectly balances salty and sweet. Warning- very addicting!

I have been in a nightly sweet treat phase recently and have been craving chocolate before I go to bed. Have been loving salty snacking chocolate from Hu (Iykyk) but wanted a chocolate snack that’s a little more ~elevated~ while sneaking in a little protein.

I’ve seen cottage cheese brownies all over the place and have been SO excited to make my own version. I found that the cottage cheese keeps the brownies really moist and fluffy- almost a spongey texture. Flakey sea salt is absolutely needed for anything chocolate and should be applied generously 🤌🏻

Took a peak at a few diff versions of cottage cheese brownies, and here’s my compilation of the best of what I found:

Sea Salt Cottage Cheese Brownies

The fluffiest brownies ever!!! These cottage cheese brownies are moist and airy, and have the perfect balance of salty and sweet. The cottage cheese adds a little boost of protein to an already healthier brownie base. Warning- addicting!!!

Ingredients
  

  • 1 cup cottage cheese I use low fat
  • 1/2 cup maple syrup
  • 1 tsp baking powder
  • 1/2 cup flour
  • 1 big pinch salt
  • 1/2 cup cocoa powder
  • 2 eggs
  • 1/4 cup melted chocolate chips
  • 1/4 cup chocolate chips
  • Flakey sea salt for topping

Instructions
 

  • Preheat oven to 350 degrees and grease an 8×8 dish or line with parchment paper
  • Blend everything together except non-melted chocolate chips.
  • Pour batter into 8×8 dish and top with chocolate chips
  • Bake at 350 for 25-30 mins until firm-ish
  • take out of the oven and top with flakey sea salt

    I am doing a “no grain/no sugar” kind of thing right now, so I halved the recipe, swapped the flour for cassava and the maple syrup for Torani vanilla. I used Special Dark cocoa powder and chopped a 90% Lindt bar (which added a little sugar) which I melted with a 1/2 tap of ghee (adds a wonderful buttery flavor) to replace the chocolate chips. I added some chopped pecans.
    I used a smaller tin and reduced cook time by 5 minutes.
    It was so much better than I expected❤️.
