Sun Dried Tomato Italian Chicken Meatballs

Ingredients
  

  • 1 lb ground chicken breast
  • 1 egg
  • ½ cup grated parmesan
  • 1 tbs olive oil
  • ¼ cup sun dried tomatoes cut into small pieces- almost minced
  • a few leaves of fresh basil (optional) chopped into small pieces
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp italian seasoning (can use a little mix of dried basil and oregano as well)
  • salt and pepper

Instructions
 

  • Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  • Chop sun dried tomatos (and basil, if using). Mix all ingredients in a bowl.
  • Roll mixture into 24 to 28 small, tablespoon-sized balls, placing on sheetpan.
