Ingredients
  

  • 2 cups shredded zucchini
  • 2 cups whole wheat flour
  • 1/2 cup honey
  • 1/2 cup applesauce
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together the honey, applesauce, egg, vanilla extract, cinnamon, baking soda, baking powder, and salt.
  • Stir in shredded zucchini.
  • In a separate bowl, whisk together the flour. Fold the flour into the wet ingredients until just combined.
  • Stir in the walnuts.
  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the loaf pan for 10 minutes before removing to a wire rack to cool completely.
