Peas and Turkey Bacon Cauliflower Gnocchi

Ingredients
  

  • 12 oz bag frozen Trader Joe’s cauliflower gnocchi
  • 4 slices cooked turkey bacon
  • 3 tbs olive oil
  • 1 large yellow onion
  • 3/4 cup frozen peas
  • 1 tsp dried Italian seasoning (can also use basil and oregano)
  • salt and pepper to taste
  • 3 tbs grated parmesan + more for serving

Instructions
 

  • Air fry the gnocchi (about five minutes each side on 375- flip so each side gets direct heat)
  • Cook turkey bacon until almost crispy (still soft, since it will get more heat later). Chop into pieces and set aside.
  • Heat 2 tbs of olive oil in a large skillet over medium heat. Add copped onions and sauté until they get soft (about 5 mins). Add salt and pepper and continue to cook until almost caramelized, stirring occasionally.
  • Stir in the frozen peas and seasoning.
  • Add the air fried cauliflower gnocchi, turkey bacon, and Parmesan. Let simmer together for a few minutes, letting the cheese melt.
  • Serve warm with extra Parmesan.
