Mediterranean Spaghetti Squash Skillet
This high volume, low carb spaghetti squash skillet is a tasty way to get a balanced meal without much mess. Throw squash, broccoli, feta, chicken, sundried tomatoes and the works into a skillet and watch this dish come together quickly.

Ingredients

1 spaghetti squash
1/2 cup chopped red onions
3 cups baby spinach
2 tbs dried basil
2 tbs stone ground mustard
2 heads cooked broccoli
1/2 cup sun dried tomatoes
1 tsp sea salt
handful of chopped olives
all the white meat of a rotisserie chicken
feta (optional)
Instructions
halve and clean spaghetti squash and microwave for 10 minutes
In a skillet sautee about half a cup of red onions in olive oil
Add in baby spinach, dried basil, stone ground mustard, cooked broccoli, sun dried tomatoes, sea salt, olives, and chicken
Once spaghetti squash is cooked, take a fork and scoop out the squash into the skillet
let it all cook together for a few minutes and top with feta
