GF Triple Berry Crumble

This delicious triple berry crumble with an oat topping is a gluten-free friendly recipe for all my gluten hating friends. It uses frozen berries, so can be thrown together without having to plan ahead. Top with vanilla ice cream (obviously).

Ingredients
  

Topping:

  • 1 cup old-fashioned rolled oats
  • 1 cup gluten-free flour
  • 1/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup melted salted butter
  • 1 teaspoon vanilla extract

base:

  • 4.5 cups frozen blackberry-raspberry mix
  • 1/4 cup oat flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking dish.
  • To make the crumble topping, whisk together the oats, flour, sugars, cinnamon, and salt in a medium bowl. Stir in the melted butter and vanilla extract until the mixture is crumbly.
  • To make the berry filling, combine the frozen berries, oat flour, sugar, salt, lemon juice, and vanilla extract in a large bowl. Stir until well combined.
  • Pour the berry filling into the prepared baking dish.
  • Sprinkle the crumble topping over the berry filling.
  • Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the filling is bubbling.
  • Serve warm with vanilla ice cream.
