Zucchini Muffins

Muffins are my absolute favorite healthy bake, and what better way to sneak a lil veg into your morning with these healthy zucchini muffins.

Ingredients
  

  • 1 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • pinch of salt
  • 1 egg
  • 1/2 cup maple syrup
  • 1/3 cup almond milk
  • 1/3 cup warm coconut oil
  • splash of vanilla
  • 1 1/2 cup shredded zucchini
  • 1/2 cup old fashioned oats

Instructions
 

  • Preheat the oven to 350 degrees and line muffin tray with greased liners.
  • In a large bowl add the flour, baking powder and soda, cinnamon, and salt and whisk well.
  • Make a well in the center of the dry mixture and add the egg, syrup, milk, coconut oil, and vanilla. Stir until the mixture just comes together (don't over mix). Add the zucchini and oats and stir together.
  • Fill 12 muffin tins evenly and sprinkle a few additional oats on each muffin.
  • Bake for 16-20 minutes until a toothpick inserted into the center comes out clean. Let cool out of the pan and enjoy.
