Low Carb Cottage Cheese Quiche

Extra veggies on hand? Consider this a baseline recipe for using up some fridge veggies in a delicious protein-packed single sere healthy quiche.

Low Carb Cottage Cheese Single-Serve Quiche

Ingredients
  

  • 2 low carb tortillas (will only use 1.5)
  • 1/2 cup cottage cheese
  • 1/2 cup egg whites (plus a little splash)
  • 3 baby bell peppers
  • 2 artichoke hearts
  • 1 scallion
  • 1/2 cup frozen spinach (can sub fresh)
  • sprinkle of parmesean
  • 1/4 tsp minced garlic
  • sprinkle of the following spices: salt, pepper, cayenne, onion powder
  • optional: spoonful of pesto (I use TJ’s kale pesto)

Instructions
 

  • Preheat oven to 350 degrees.
  • In a small blender, blend together cottage cheese, egg whites, parm, spices, garlic, and optional pesto.
  • Add in veggies and pulse-blend to chop and mix.
  • In either two single-serve pie dishes, or one slighlty larger dish (a small pyrex, for example), spray the bottoms and sides, then fit the tortilla to the dish. I used two single serve pie dishes, and cut out a circle from each tortilla to fit the bottom of the dish, and long strips for the sides.
  • Pour egg batter into the dish(es) and sprinkle some parm on top.
  • Cook for 45 minutes until golden brown.
