Coconut Almond French Toast

This french toast recipe is easy to throw together, but feels like you spent hours. This recipe uses pantry staples, with a splash of lemon juice to give it a nice bite. Double the recipe for the family, or make it low carb subbing out with low cal bread.

Ingredients
  

  • 4 slices bread (can use low-cal)
  • 2 eggs
  • 1/2 cup almond milk
  • 1/8 cup lemon juice
  • splash of vanilla
  • 1/2 tsp almond extract
  • 1 tsp cinnamon
  • dash of nutmeg
  • 1/2 tsp maple syrup
  • coconut oil (for pan)

Instructions
 

  • Mix all the ingredients together in a shallow dish.
  • Soak two of four slices of bread in the shallow dish until saturated, then flip over and let the other side soak.
  • Place your toast in a coconut-oiled pan over medium heat and let cook for 2 or 3 minutes, then flip to the other side allowing another 2-3 minutes of cook time.
  • Repeat with the other two slices of bread.
  • Best garnishes: raspberry jam, maple syrup, coconut
