Sun-Dried Tomato and Feta Chicken Meatballs

These sun-dried tomato and feta chicken meatballs for all my fellow chefs who like a good high-protein meal, but don't live touching slimy chicken breasts. The prep time for this dinner is incredibly low effort, and is done all in one bowl, so it's a perfect feeling lazy or mid-week meal that still packs a punch flavor-wise. Perfect topping for your Mediterranean salad!

Ingredients
  

  • 1 lb ground chicken
  • 1/2 cup low fat feta
  • 1/3 cup chopped sun dried tomatoes
  • 1 egg
  • 1/4 cup panko breadcrumbs I used Italian seasoned
  • 1 tsp jarred mince garlic
  • juice of 1/2 lemon
  • 1/4 cup chopped scallions
  • salt and pepper big pinch of each

Instructions
 

  • preheat oven to 400 and line a baking sheet with parchment paper
  • combine all ingredients in a medium sized bowl
  • roll mixture into large tablespoon-sized balls (should get around 18-20) and place on parchment
  • cook for 20-25 minutes and let cool a bit before enjoying
