Preheat oven to 325 degrees. Line two baking sheets with parchment paper.
In a large bowl, mix together oats, pecans, and almonds.
In a smaller mixing bowl, mix together everything else except for the cranberries.
Fold the wet ingredients into the dry ingredients, and adjust spices as needed.
Spread your granola mixture onto the two baking sheets, and try to get them as flat as possible, which might be a little challenging because the discard makes the granola sticky. If your granola isn’t flat, it won’t get as crunchy.
About 15 minutes into baking, sprinkle on your cranberries, and add some flakey sea salt.
Bake fo around 25 to 30 minutes total, until golden brown. Let cool completely before breaking apart and storing.
