Sourdough Discard Cinnamon Maple Granola

Ingredients
  

  • 4 cups rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup sliced almonds
  • 1 cup sourdough discard
  • 1/2 cup maple syrup
  • 1/3 cup olive oil
  • 1/2 tsp salt (plus flakey sea salt for topping)
  • 1.5 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp nutmeg
  • 1/2 cup cranberries

Instructions
 

  • Preheat oven to 325 degrees. Line two baking sheets with parchment paper.
  • In a large bowl, mix together oats, pecans, and almonds.
  • In a smaller mixing bowl, mix together everything else except for the cranberries.
  • Fold the wet ingredients into the dry ingredients, and adjust spices as needed.
  • Spread your granola mixture onto the two baking sheets, and try to get them as flat as possible, which might be a little challenging because the discard makes the granola sticky. If your granola isn’t flat, it won’t get as crunchy.
  • About 15 minutes into baking, sprinkle on your cranberries, and add some flakey sea salt.
  • Bake fo around 25 to 30 minutes total, until golden brown. Let cool completely before breaking apart and storing.
