Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, whisk together the honey, applesauce, egg, vanilla extract, cinnamon, baking soda, baking powder, and salt.
Stir in shredded zucchini.
In a separate bowl, whisk together the flour. Fold the flour into the wet ingredients until just combined.
Stir in the walnuts.
Pour the batter into the prepared loaf pan.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the loaf pan for 10 minutes before removing to a wire rack to cool completely.
