Caramelized Onion Spaghetti Squash Casserole

Ingredients
  

  • 1 spaghetti squash
  • 2 yellow onions
  • 8 oz mushrooms
  • 1 cup shredded gruyere
  • 1/2 cup vegetable broth
  • 1 cup tomato sauce
  • 1 tsp garlic powder
  • 2 tbs brown sugar
  • 3 eggs
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degreed and line a baking sheet with parchment paper. Halve and clean spaghetti squash, bake for 45 minutes, cut side down, sprinkled with salt and pepper. If in a rush, you can also throw in the microwave for roughly 10 minutes.
  • Meanwhile, slice onions and throw in a frying pan with olive oil over medium heat. Stir continuously, adding water if the onions start to stick. After onions cook down, add brown sugar to help the caramelization process.
  • Once onions cook down, add mushrooms and continue to sautee. Add broth and continue to cook down until broth is absorbed.
  • Once squash is cooked, take out of squash shell and place in 8x8 casserole dish. Mix in the rest of the ingredients except for gruyere. Sprinkle cheese on top.
  • Bake for 1 hour.
