Brussels and Apple Winter Salad

Ingredients
  

  • 1 large (16oz) bag of shaved sprouts
  • 1 cup pomegranate seeds
  • 1 large chopped Granny Smith
  • 1.5 cups toasted pecans
  • 1 5 oz container shaved parm
  • 1/2 cup dried cranberries

dressing:

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 tbs apple butter
  • 1 tbs Dijon
  • salt and pepper to taste

Instructions
 

  • Mix together all ingredients for the base of the salad. Toast pecans for about 5 minutes at 400 degrees.
  • Mix together all ingredients for the salad dressing. Pour over the salad and mix together.
