Preheat oven to 350 degrees.
In a small blender, blend together cottage cheese, egg whites, parm, spices, garlic, and optional pesto.
Add in veggies and pulse-blend to chop and mix.
In either two single-serve pie dishes, or one slighlty larger dish (a small pyrex, for example), spray the bottoms and sides, then fit the tortilla to the dish. I used two single serve pie dishes, and cut out a circle from each tortilla to fit the bottom of the dish, and long strips for the sides.
Pour egg batter into the dish(es) and sprinkle some parm on top.
Cook for 45 minutes until golden brown.
