Pumpkin French Toast

Healthier pumpkin french toast for when you need a little cozy breakfast that’s quick to throw together. I topped it with a maple greek yogurt mixture for an upgraded whipped cream!

Ingredients
  

  • 6 slices bread (I used low cal)
  • 2 eggs
  • 1/2 cup pumpkin purée
  • 1.5 tbs maple syrup
  • 3/4 tsp cinnamon
  • 1/3 cup almond milk
  • 1 tsp pumpkin pie spice
  • 1.5 tsp vanilla
  • Splash of maple syrup
  • Pinch of salt
  • Mix of Greek yogurt and 1 tbs maple syrup to top

Instructions
 

  • Mix together all the ingredients in a shallow dish.
  • Warm up skillet over medium heat and melt a tiny amount of butter (can also use oil).
  • Dip both sides of bread generously in batter and bake each side in pan for about 3 mins.
  • Repeat for each slice of bread.
  • Top with yogurt mix and additional pumpkin pie spice
