Very Lazy Lentil Soup
Pre-chopped veggies and lots of dump and cook in this recipe

- pre-chopped medley of onions celery, carrots
- Drizzle olive oil
- 2 cups dried lentils
- 2 boxes of veggie stock
- 2 tsp jarred minced garlic
- 24 oz marinara sauce
- 2 tsp cumin
- A few springs of thyme
- 1/4 tsp cayenne
- Salt and pepper to taste
- 1 bag spinach
In a large pot cook onions/celery/carrots over medium heat with oil for about 5 mins.
Add cumin, cayenne, thyme, salt, pepper, and garlic to the pot. Let cook for 1 min.
Wash dried lentils in a mesh strainer, then add to veggies with stock and marinara sauce.
Bring to a simmer and let cook for about 25 mins until lentils are tender.
Stir in spinach.
