Very Lazy Lentil Soup

Pre-chopped veggies and lots of dump and cook in this recipe

Ingredients
  

  • pre-chopped medley of onions celery, carrots
  • Drizzle olive oil
  • 2 cups dried lentils
  • 2 boxes of veggie stock
  • 2 tsp jarred minced garlic
  • 24 oz marinara sauce
  • 2 tsp cumin
  • A few springs of thyme
  • 1/4 tsp cayenne
  • Salt and pepper to taste
  • 1 bag spinach

Instructions
 

  • In a large pot cook onions/celery/carrots over medium heat with oil for about 5 mins.
  • Add cumin, cayenne, thyme, salt, pepper, and garlic to the pot. Let cook for 1 min.
  • Wash dried lentils in a mesh strainer, then add to veggies with stock and marinara sauce.
  • Bring to a simmer and let cook for about 25 mins until lentils are tender.
  • Stir in spinach.
