Pumpkin Chocolate Chip Muffin Baked Oats

Ingredients
  

  • ½ cup oats
  • 1 egg
  • ¼ cup pumpkin
  • ¼ cup milk
  • 1 tbs maple syrup
  • 1 tsp vanilla
  • tsp pumpkin spice
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp turmeric
  • squeeze of lemon juice
  • big pinch salt
  • handful chocolate chips
  • flakey sea salt for topping- optional

Instructions
 

  • Preheat oven to 350 degrees. Grease oven-safe ramekin.
  • Blend everything together except for chocolate chips.
  • Pour batter into the ramekin and stir in/top with chocolate chips.
  • Bake for 20-25 minutes until golden and a toothpick comes out clean.
  • Top with flakey sea salt, let cool, and enjoy.
