Pumpkin Chocolate Chip Muffin Baked Oats
Picture this: fall in baked oat form.

- ½ cup oats
- 1 egg
- ¼ cup pumpkin
- ¼ cup milk
- 1 tbs maple syrup
- 1 tsp vanilla
- 2½ tsp pumpkin spice
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp turmeric
- squeeze of lemon juice
- big pinch salt
- handful chocolate chips
- flakey sea salt for topping- optional
Preheat oven to 350 degrees. Grease oven-safe ramekin.
Blend everything together except for chocolate chips.
Pour batter into the ramekin and stir in/top with chocolate chips.
Bake for 20-25 minutes until golden and a toothpick comes out clean.
Top with flakey sea salt, let cool, and enjoy.
