Mix together all ingredients using the dough hook of your KitchenAid (or kneading thoroughly).
Once in a tight, bouncy ball, let sit (covered in a towel) for roughly 30 minutes, so the dough can proof.
After 30 minutes, split into walnut-sized balls. Feed into the pasta press attachment of your kitchen aid, a couple balls at a time (careful not to over-feed).
