High Protein Egg White Pancakes

Ingredients
  

  • 6 egg whites
  • cup flour
  • ½ tsp baking soda
  • 1 tsp apple cider vinegar
  • splash vanilla extract
  • small pinch salt
  • ¼ to ⅓ cup greek yogurt non fat

Instructions
 

  • whip 6 egg whites until stiff peaks form
  • Add in the rest of the ingredients, continuing to whip, keeping the consistency thick
  • Spray a pan with oil or lightly butter. Add a couple scoops of batter to the pan forming medium sized pancakes
  • Add topping of choice and cover pan
  • Once bottom is solid and lightly brown (about 3-4 minutes), flip and cook 2-4 minutes on other side until golden
  • Continue until you have no more batter

Notes

The pancakes are a great texture but don’t have a ton of flavor themselves. I would consider adding a touch of sugar or maple syrup to give the base more flavor OR do something fun like chocolate chips as your add in. I used frozen blueberries, which were still fab, but didn’t pack as much as a flavor punch as I think other stuff could have.
