Grilled Peach and Burrata Salad

Something about this combo is just absolutely perfect. This is a measure with your heart situation, so make as much or as little as you want.

Ingredients
  

Salad Base- add as much or as little as you want! Very flexible.

  • A couple handfuls of spinach
  • A couple handfuls of arugula
  • A few peaches to grill
  • burrata
  • pistachios
  • hot honey
  • basil fresh, chopped into ribbons

Salad Dressing

  • 2 tbs apple cider vinegar
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 1 spoonful grainy mustard
  • ½ spoonful honey
  • minced garlic to taste- but I just add in around ¼ tsp to start
  • dash of onion powder
  • salt and pepper to taste

Instructions
 

  • Half peaches and toss on the grill or throw over a gas stove (I used a blackstone slate on top of my stove). for 5 to 10 minutes until tender on both sides.
  • Toast pistachios at 400 for about 10 minutes.
  • Toss together spinach, arugula, and a little bit of dressing (don’t over dress).
  • Chop up burrata and basil, add to bowl with pistachios.
  • Top with grilled peaches and drizzle hot honey on top.
