Salad Base- add as much or as little as you want! Very flexible.
A couple handfuls of spinach
A couple handfuls of arugula
A few peachesto grill
burrata
pistachios
hot honey
basilfresh, chopped into ribbons
Salad Dressing
2tbsapple cider vinegar
¼cupolive oil
¼cuplemon juice
1spoonfulgrainy mustard
½spoonfulhoney
minced garlicto taste- but I just add in around ¼ tsp to start
dash of onion powder
salt and pepper to taste
Instructions
Half peaches and toss on the grill or throw over a gas stove (I used a blackstone slate on top of my stove). for 5 to 10 minutes until tender on both sides.
Toast pistachios at 400 for about 10 minutes.
Toss together spinach, arugula, and a little bit of dressing (don’t over dress).
Chop up burrata and basil, add to bowl with pistachios.
Top with grilled peaches and drizzle hot honey on top.
