Brown Sugar Pecan Bread Pudding

Ingredients
  

base

  • 3/4 (ish) loaf of neglected or stale bread
  • 2 cups milk whole
  • 4 eggs beaten
  • 2 tbs melted butter cooled
  • ½ cup sugar
  • tsp cinnamon
  • ¼ cup nutmeg
  • tsp vanilla

topping

  • ½ cup brown sugar
  • ¼ cup butter
  • 2 tbs milk
  • tsp vanilla
  • 1 tsp cornstarch
  • big squeeze lemon juice
  • ¾ cup chopped pecan pieces
  • pinch of salt

Instructions
 

  • Preheat oven to 350
  • Cut bread into 1inch(ish) cubes
  • Lightly grease the bottom of an 8x8 dish and fill to the top (a little over) with your bread cubes
  • In a separate bowl, add together everything else for the base, mixing well
  • Pour mixture over bread in 8x8 pan, allowing bread to soak up mixture. Pat pieces down, so they get fully soaked, and let sit for a few minutes.
  • Once bread has soaked up the mixture, push down again, so that all pieces can be fully soaked by the liquid.
  • Bake for about 50 minutes, covering with tin foil about 35-40 minutes in.
  • While baking, heat all ingredients for the topping over low heat, until simmering.
  • Once bread pudding base is done, pour topping over, and serve warm with vanilla ice cream.
