This perfect lunch salad is full of ingredients that just go together- goat cheese, granny smith apples, cranberries, sweet potatoes, you know the deal. The maple tahini dressing simply puts it over the top.

Ingredients
  

  • 1 bunch arugula
  • 1/2 cup roasted sweet potatoes, diced
  • 1/2 cup cooked quinoa
  • 1/2 cup chickpeas, drained and rinsed
  • 1 Granny Smith apple, diced
  • 1/4 cup cranberries
  • 1/4 cup goat cheese, crumbled
  • Maple Tahini Dressing
  • 2 tablespoons tahini
  • 1 tablespoon maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water

Instructions
 

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss the sweet potatoes with 1 tablespoon olive oil and 1/2 teaspoon salt. Spread on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
  • In a large bowl, combine the arugula, quinoa, chickpeas, apple, cranberries, and goat cheese.
  • To make the maple tahini dressing, whisk together the tahini, maple syrup, salt, pepper, and water.
  • Drizzle the maple tahini dressing over the salad and toss to coat.
  • Serve immediately.
